To this end, Mamma Avilia suggests the following procedure for preparing pizza dough with the stand mixer: start by dissolving the brewer's yeast in approximately 325 ml of room-temperature water, also adding a teaspoon of sugar or a little honey: this will help activate the yeast. Pour everything into the stand mixer bowl, where you will already have attached the dough hook.

At this point, start adding the flour, preferably type 0 flour, and incorporate it gradually, running the stand mixer at low speed. After a couple of minutes, when the dough begins to take shape, add the salt and then slowly pour in the extra-virgin olive oil.
