To this end, Mamma Avilia suggests the proper procedure for preparing pizza dough with the planetary mixer: begin by dissolving the brewer's yeast in about 325 ml of room-temperature water, also adding a teaspoon of sugar or a little honey; this will help activate the yeast. Pour everything into the planetary mixer's bowl, where you will already have attached the dough hook.
At this point, start adding the flour, preferably type 0 flour, and incorporate it little by little, running the planetary mixer at low speed.
